Frozen Protein Bites
These are the perfect tasty treat for summer. They are loaded with healthy fats and protein but have only 1 g of sugar per serving. They taste sweet but don't have any added sugar so they fulfill all the cravings without spiking blood glucose. And its a one bowl recipe that takes 30 minutes or less.

Maca Nut Butter Cups
Prep time 15 minutes Freeze time 15 minutes
Servings ~20 cups
Ingredients:
1 tsp maca powder, to taste
1/2 tsp cinnamon, to taste
1/8 tsp sea salt to taste
1/3 c freshly ground flax seeds
2 Tbs freshly ground hemp seeds
1/2 almond butter
1/4 c sunflower butter
1/2 c coconut butter, softened in a warm water bath
3 Tbs coconut oil
1 tsp vanilla extract
1 handful dark chocolate chips
1 Tbs cocoa powder for dusting on top
Procedure:
Line a muffin pan or bake sheet with mini muffin cups. Or grease whatever freezer safe mold you'll be using with coconut oil.
Combine all dry ingredients in a medium bowl.
Add nut butters and coconut oil and mix well until everything is evenly distributed. Stir in vanilla extract and dark chocolate chips.
Use 1 Tbs scoop to fill muffin cups.
To decorate: place 1-3 chocolate chips on top of each cup. Use a fine mesh strainer to dust cocoa powder on top. Alternatively, pour melted chocolate on top then sprinkle with coarse sea salt or coconut flakes.
Place in the freezer for 15 minutes or until frozen. When solid, remove from molds and store in the freezer in a large ziplock bag or food storage container.
Enjoy this guilt free pleasure after a work out, as an afternoon snack, when you're craving something sweet, or at any time to help balance blood sugar and restore energy levels.
